The silverfish board building forum is your best bet: http://www.silverfishlongboarding.co...oard-building/
I’ve only seen one guy on there building freebord decks (me!) but the longboard building info will get you what you need. A freebord deck just needs a concave shape so it’s a lot simpler than a longboard deck which can have concave plus camber or rocker or kicks or drops etc.

Here’s a very rough sketch of the process:
Start with thin layers of wood – I use 1/8” Baltic Birch but I’m not sure that’s available in Brisbane. You can use maple, birch, bamboo, etc. Many woods are NOT suitable,
Glue/press the layers to get a concave blank
Cut the blank into the rough shape of your deck
Sand or file or route to the final shape
Sand or file or route to round off the rails
    Drill your mounting holes
Apply your finish (paint, varnish, etc)

Spend a few hours on silverfish and you’ll learn a lot.

No I've never done that. There was a video on the old forum where someone did that. Looked fun, but really not the best material for a freebord.

I use Tightbond III. Just don’t use Gorilla Glue because the foaming action will push your plys apart.

do you use washers/gaskets on top of the bolts too?

Yes - big washer on the bottom, small washer on top of the baseplate. With Alpha trucks, a 5/8" washer on the bottom will just fit - any bigger and you need to grind a flat spot for it to clear the truck. I think there is plenty of clearance with G3 trucks.
